So a seemingly plain recipe.....DELICIOUS! Granted I may reduce or all together eliminate the sherry in the recipe, overall a success, so much so I almost ate half the recipe myself!
I thought you might like it as well, so here goes. (Remember this is the healthy version, though it doesn't taste like it!)
-3 quarts water
-12 oz broccoli
-24 oz chicken breasts (use another part of the chicken if you prefer)
-1 can evaporated milk (mine was 12 oz, though if you prefer a thinner sauce in your casserole, opt for a larger can)
-1/2 cup flour (I didn't sift mine, though it probably would have helped)
-1/4 tsp EACH salt and pepper
-pinch of nutmeg (I didn't have any, so I did without and it was just fine)
-1 cup fat-free mayonnaise (again, you may substitute full fat mayo if you wish, I was just in the mood for comfort minus the calories)
-1/2 c fat-free sour cream
-1/4 cup dry sherry (I wasn't sure I liked this, if you plan to omit it, replace with 1/4 cup water)
-1 tsp Worcestershire sauce (yum!)
-1 can cream of mushroom soup (10.75 oz)
-1 cup Parmesan cheese divided
Preheat oven to 400 degrees
Boil your water, and, if you like, add some salt to flavor your water. Add the broccoli and cook for 5 minutes, but not too long or it'll be too soggy. If you have frozen broccoli, it's perfectly fine to microwave it according to package directions. After the broccoli is done, add your chicken to the pot of boiling water, reduce the heat to medium-low and simmer for 15 minutes until cooked through. Remove chicken. When chicken is cooled, cut into bite-sized pieces.
(Now the best part....the creamy sauce!)
In a medium sauce pan combine your salt, pepper, nutmeg, flour and evaporated milk. Bring this mixture to a boil and once it reaches a boil whisk for one minute, no less, and promptly remove it from the heat. Cool for a minute or two before adding the next five ingredients--1 cup fat-free mayo, 1/2 cup fat-free sour cream, 1/4 cup dry sherry, 1 tsp worcestershire sauce, and 1 can cream of mushroom soup--in addition to 1/2 cup of your delicious reduced fat parmesan cheese.
Once your sauce mixture is thick, creamy, and delicious looking, fold your chicken and broccoli into the sauce until well combined. Once well-combined, throw into a 13x9 baking pan , top with the rest, and maybe some extra (sh! I won't tell), of the cheese and bake at 400 degrees for 50 minutes or until bubbly and brown on top.

Oh and this dinner was followed by a trip to watch "It's Complicated", another movies loaded with delectable looking food, especially those chocolate croissants.
